Doner kebab, gyros and pizza – who doesn’t love these fast food classics? As I’ve already posted a great recipe for lahmacun, pizza dough and flatbread, I’m happy that you’ve decided to try making your own doner kebab bread. It’s a delicious bread that you can easily make at home.

In this blog post, I will give you a detailed recipe for homemade pide bread, as well as some useful tips and tricks to get the perfect result.

The smell of freshly baked bread is irresistible, and there’s nothing better than enjoying it straight from your own oven. Preparing the kebab bread takes some time and patience, but the taste and the feeling of enjoying something homemade make it totally worthwhile.

What is Pide Bread?

Pide bread, also known as flatbread, Greek pita or pitta, is a soft, fluffy bread that is often used as a base for Turkish doner kebab. It has a round or oval shape and is traditionally baked in the oven.

Pide bread is an important component of the classic doner kebab which is a popular take-away food in Germany. It is used to wrap and transport the grilled meat, salads, sauces and side dishes. It should be easy to handle so that you can eat the doner kebab without it falling apart.

The recipe for doner kebab bread is pretty simple and you can find most of the ingredients in any well-stocked supermarket. By making bread at home, you can ensure that it is fresh and perfectly tailored to your needs.

Ingredients for the Bread Dough

The bread recipe consists of simple basic ingredients that you probably already have in your pantry. You will need:

  • Flour (all-purpose, wheat flour, spelt flour or gluten-free flour)
  • Yeast (dry yeast or fresh yeast)
  • Salt
  • Sugar
  • Water
  • Olive oil (or canola oil)
  • Sesame & black cumin seeds (for sprinkling)

How to make Doner Kebab Pide Bread

Step 1: Make the yeast dough

First, mix the flour, dry yeast, salt and sugar in a bowl. Next, pour in the water and olive oil and work in with a wooden spoon. Then knead with the dough hook of a food processor or with your hands for approx. 8-10 minutes until a smooth dough forms. Cover the bowl with an airtight lid and leave to rise in a warm place for approx. 45 minutes.

Step 2: Leave the yeast dough to rest

Then knead the yeast dough again on a floured work surface and shape / round into 4 flat loaves. (The dough is a little sticky, but that’s how it should be so that the bread is nice and soft. The folding/kneading technique shown in the video works well). Place the kebab breads on a baking tray lined with baking paper, cover and leave to rise again for 15 minutes.

Step 3: Bake the bread

After the resting time, brush the dough pieces with olive oil and sprinkle with sesame seeds and black cumin. Place the pita breads in a hot oven and bake at 428 °F (220 °C) heat for 15-20 minutes until golden brown. Then remove and turn into a doner kebab or serve as a side dish with various dips such as roasted red pepper dip, hummus, guacamole or tzatziki. Enjoy your meal!

Pide Bread Filling Ideas – classic, vegan or vegetarian

Now that your homemade pide bread is ready, you can fill it however you like. You can fill the doner kebab in the classic way with grilled meat or meat alternatives as well as lettuce, tomatoes, cucumber, onions and garlic sauce or another delicious sauce. Or you can put together a vegetarian pita sandwich with falafel or pulled mushrooms, coleslaw and tzatziki sauce. Of course, you can also simply be creative and try out your own variations. The possibilities are endless!

Tips for making the perfect Pide Bread

Here are some tips and tricks to make sure your soft bread turns out perfectly:

  • Use good quality flour. A good flour with a higher gluten content ensures a better texture and consistency of the kebab bread.
  • Make sure the water is lukewarm. Water that is too hot can kill the yeast and the bread will not rise properly.
  • Let the dough rise long enough to double in volume. This is crucial to achieve a light and airy texture of the bread.
  • Make sure the oven is properly preheated before you put the bread in. This will ensure an even and crispy crust.
  • If you want to store the bread, wrap it in a clean tea towel and keep it in a cool place. It will stay fresh for longer.

How to store Pide and Pita Bread?

To keep doner kebab bread fresh and store it for longer, I recommend that you store it correctly. Here are a few tips:

  1. Airtight packaging: wrap the bread in cling film or place it in an airtight container. This prevents air from getting in and drying out the bread.
  2. Store in the fridge: If you want to keep the bread for longer than a day, I recommend keeping it in the fridge. The bread will stay fresh for longer and won’t dry out as quickly.
  3. Reheating: If you want to reuse the pide bread, you can reheat it briefly in the microwave or oven. This will make it soft again and easier to eat.

However, it is important to note that homemade pita bread is best eaten fresh. The longer it is stored, the drier and less tasty it can become. It is therefore best to enjoy the bread on the day it is made.

  • 3 cups (360 g) flour all-purpose, spelt or gluten-free flour*
  • 1.5 tsp (5 g) dry yeast or ⅓ cube fresh yeast
  • 1 tsp salt
  • 1 tsp sugar
  • 200 ml water
  • 1 tbsp olive oil + a little more to coat
  • 1 tsp sesame seeds
  • 1 tsp black cumin

  • Combine flour, dry yeast, salt and sugar in a bowl. Form a mold in the center. Pour in water and olive oil and work it in with a wooden spoon. Then knead with the dough hook of a food processor or with your hands for about 8-10 minutes until you have a smooth dough. Cover the bowl airtight and let it rise in a warm spot for about 45 minutes.

  • Then transfer the yeast dough to a floured work surface, knead again and shape / round into 4 flat loaves. (The dough is a bit sticky, but that's the way it's supposed to get a nice and soft bread. With the folding / kneading technique as shown in the video it works well!).

  • Place the flatbreads on a baking sheet lined with parchment paper and let them rise, covered, for another 15 minutes.

  • Meanwhile, preheat the oven to 428 °F (220 °C).

  • After the resting time, brush the dough pieces with olive oil and sprinkle with sesame seeds and black cumin.

  • Place the doner kebab breads in the hot oven and bake for 15-20 minutes until golden brown. Then remove and turn into a doner kebab or serve as a side dish with various dips such as roasted red pepper dip, hummus, guacamole or tzatziki.

Notes

  • If using fresh yeast, it must first be dissolved in water with the sugar and set aside for about 5 minutes until it starts to foam. Then add to the dry ingredients and knead to make a yeast dough.
