Feta Bruschetta with Balsamic Glaze Recipe

Bruschetta is just one of those really simple dishes that everyone loves. It is fresh, hearty and not to mention, versatile. Versatile enough to toss on some Feta Cheese and drizzle on some sweet and tangy balsamic glaze.

Traditional Bruschetta only calls for a few simple ingredients – tomato, basil, garlic and olive oil. Which already is a combination of ingredients made in heaven. But for me, that makes the perfect foundation to mix things up and throw in a few special additions, my favorite one being feta.

ILOVE feta. And for me there is nothing better to add it to than a fresh homemade bruschetta. Not just because feta bruschetta is fun to say, but because it tastes delicious!

Another addition to feta bruschetta I love is a sweet and silky Balsamic Glaze. You can use store bought but I’ve included a simple recipe here as well.

What is in Feta Bruschetta?

Star Ingredients

  • On their own they may seem like simple ingredients – tomato, garlic, basil, parsley, feta and balsamic glaze – but paired together you have a killer flavor combination.
    • Garden fresh tomatoes are the secret to levelling up your bruschetta recipe! I serve bruschetta at all my summer BBQs and get togethers with my home grown tomatoes.
  • The richness and creaminess of the feta brings something so delicious to the party. It creates such a beautiful combination with the tomato, garlic and basil.
  • The balsamic glaze not only looks beautiful but adds a sweetness that bring this appetizer together!

Notes

Balsamic Glaze Ingredients
1 cup Balsamic Vinegar
1 tbsp granulated sugar or brown sugar

How much sugar do you need to make balsamic glaze?
I usually use 1 cup balsamic vinegar to 1 tbsp sugar ratio. Some recipes call for much more sugar, but I think it gets too sweet after a couple tbsp of sugar. I recommend starting with a low amount of sugar as you can always make it sweeter at the end.

How to make Balsamic Glaze
Bring balsamic vinegar and sugar to boil in a pot.
Reduce to simmer for 20 mins, or until a syrupy texture.
