Ingredients

Vegan Gingerbread Caramels

  • 1 cup coconut cream from a can
  • 1 cup brown sugar
  • ½ cup molasses
  • ¼ cup vegan butter
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cloves
  • ¼ tsp salt

Instructions

  1. Line an 8x8 baking pan with parchment paper, leaving some overhang for easy removal later. Grease it lightly with coconut oil or vegan butter.
  2. Place a medium saucepan over medium heat and add the coconut cream, sugar, molasses, and vegan butter. Stir until well combined and the solid components have melted.
  3. Bring the caramel mixture to a boil while stirring constantly. Then reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally.
  4. Next, add the ground spices, vanilla, and salt. Stir to combine, then pour the caramel mixture into the prepared baking pan.
  5. Allow it to cool at room temperature for an hour, then transfer it to the fridge to let it set completely. This usually takes around 2 more hours. You can also do this overnight!
  6. Once the mixture has set, lift the caramel out of the baking pan by grabbing the parchment paper overhang.
  7. Cut the caramel into small squares using a sharp knife. Dust them all with powdered sugar to prevent sticking!
  8. Enjoy the caramels immediately, or store them in an airtight container in the fridge. They can last for up to two weeks.
